We’ve been inspired by Team GB heading to Brazil for the Olympics and have created a Rio Cocktail. Using cocoa nib from South America and cachaça (Brazilian rum and main component of caipirinha) along with some tropical fruits this is the perfect drink for watching the games this summer.

Curio’s Rio Cocktail

Steep the vanilla in a litre of pineapple juice for 48h. Reduce it a quarter on the stove and add 200g of mango purée. Leave to cool.

Add all the ingredients in the shaker. Shake well and strain over ice in a terracotta glass over ice.

Garnish with an oven dried lime wheel.
